I didn’t know that! Thanks, Nate. Which artist did the best version, in your opinion?

I don’t really have any idea. Not to be overly particular but I don’t tend to apply terms like “best,” “better,” “greatest,” etc. to art. I also haven’t heard all the versions. The ones I’m most familiar with are by Janis and the Grateful Dead. Though she didn’t write it, I tend to think of Janis’ as the definitive version.
You may also find this of interest. When I first discovered the Film: Acoustic series from the Modern School of Film that paired musicians/bands with movies of their choice I learned the song was inspired by Fellini’s La Strada which I’ve admittedly never seen, I just didn’t see that coming.
