i thought it sounded german... ;)
when i was a kid we had liver - usually pork or beef - with onion and apple, and mashed potatoes. chicken liver was for special occasions, in soufflet omelettes.

oh, just for the record:
Fish'n'chips.

gizzards is, btw, kau- or muskelmagen. and no, i hadn't heard of it as an edible part of a chicken before i came here either.

OMG! You just helped me to remember. It was my grandmother who used to add the apples into the recipe I gave out. When my mom would make it, she would skip the apples because she did not feel like dealing with the hassle of peeling And slicing them.

Thus the reason why I liked it better when I ate it at my grandmother's house. And, since I was a young child, my mother figured I would not know the difference....WRONG!
Now I'm craving for this, with the apples. I will make some in your honor soon.

there's a pub in dalkey that serves liver with onions and mashed potato in an apple and mustard sauce. it's absolutely divine... :)

hm, well you just boil some taters.
Then you make a simple white sauce, with a buttery roux, milk and stock. some nutmeg. this has to be creamy and yummy and lots!
this is served on one plate together with a nice tossed (iceberg, and some radishes preferably) with a very simple vinaigrette. top off with a nicely fried egg or two, and yum on. Grannie knows best;)
Then you make a simple white sauce, with a buttery roux, milk and stock. some nutmeg. this has to be creamy and yummy and lots!

Potato and white sauce goes in the bowl first, then the salad, then the fried egg on top?

ah sure, yeah... my dad used to make that when i was little. he's a great cook, but for some reason whenever he was on lunch duty it was either spuds in white sauce or poached eggs in mustard sauce. :rolleyes: ;)
